I love fruit salsas especially paired with fish. I usually gravitate towards a mango pineapple salsa but as the strawberries have been so luscious lately and mine in the yard are going to be hard to keep up with soon, I broke out of my fruit salsa comfort zone and made some strawberry salsa this weekend. I firmly believe that the kitchen is a place for experimentation and not strictness. A lot of the food that I make in my kitchen follows a really loose equation of “a little bit of this and a little bit of that, combined with a little more of this and a pinch of that.” It is just how I cook. So, this strawberry salsa recipe is not so much a recipe as a suggestion. You may find that you want to add tomato to it or blueberries or pineapple or any other ingredient on the planet that you find delicious, and I am sure if you trust your instincts and your taste buds that you will have something beautiful and scrumptious to dip a chip into or slather on top of a fish taco.
Here is my strawberry salsa suggestion:
2 cups large diced strawberries
1 medium diced mango
½ cup minced red onion
Juice of 1 lime and the zest
2 T minced cilantro
2T minced mint
1 or more minced jalapenos depending on how hot you like it
Pinch of salt
Little bit of balsamic vinegar
Adjust seasonings and ingredients until you LOVE it! Be confident to experiment and above all ENJOY!
