This 8 part series is taught by personal chef and caterer, Kristen Lyon. The series is designed for the home cook who appreciates well prepared, delicious, locally raised and processed foods, but wants to save time and money. Kristen will transform forever the way you create meals at home with her practical approach to making food deliciously simple. Take one class or more. If you take more than one class, receive $5 off any additional classes taken. Your discount for multiple classes will be given at the end of the series on a Co-op gift card.

Thursday, April 5/6:30-9pm* Eggcellent Eggs:* Expand your egg knowledge and how to use excess eggs in easy meals and freezable recipes. Desserts, too!

Thursday, May 24/6:30-9pm *Spring Treasures:* Learn how to perfectly cook the delicate vegetables of spring to perfection to lock in the nutrients and unlock the flavor!

Thursday, June 14/6:30-9pm *Simple Soft Cheeses:* Make Cherve, Yogurt Cheeses, Ricotta and Mozzarella with confidence and a minimal effort.

Thursday, July 26/6:30-9pm * Fruit Preservation:* Hands on learning of fruit leather, fruit butters and sauces, chutneys, freezing tips and canning. Fruit infused liquors anyone?

Thursday, August 2/6:30-9pm *Vegetable Preservation:* We'll pickle, dehydrate, blanch and freeze various vegetables and learn to can pickles and relishes that will last all winter long!

Thursday, September 27/6:30-9pm *Stocks and Sauces:* Using simple methods to make your own stocks at home, we will gain a base knowledge of how to create complex sauces from a few ingredients and flavors!

Thursday, October 4/6:30-9pm *Soup Inspirations:* Starting with excellent and easy tips to make beautiful homemade stocks we will build from there to light and easy soups, then onto hearty,creamy and international flavors for all taste buds and seasons.

Thursday, November 29/6:30-9pm *Smoking and Curing Meats: * Learn to preserve and extend the life of your favorite cuts of meat through salting and curing and also the basics of how to smoke your foods for flavor and food preservation.
