Vegan Chocolate Icing

This frosting is perfect for anyone who prefers to eat vegan, dairy-free or gluten free.

Ingredients
1 cup cashews pieces
1 can coconut milk
¼ cup grade B maple syrup
Pinch sea salt
2 teaspoons vanilla
6 ounces chocolate of choice, semi sweet

Place the cashews in a dry blender and process to a fine powder.

Add the coconut milk, maple syrup, salt and vanilla. Blend again until the mixture is creamy and smooth.

Pour into a quart size pan and heat slowly until the filling begins to boil. Use a whisk to stir periodically.

Reduce the heat and continue to simmer gently until the filling thickens. This will take about 20 minutes.

Break the chocolate into small pieces and add to the warm icing. Stir into the mixture.

Allow to cool completely before using. Store in the fridge if using the next day.
