Learn more advanced knife and cooking skills. Each day’s menu will focus on a different technique from making pie crust to rolling sushi and much more. Recipes include: Homemade Mozzarella for Pizza Pie Day, Bean and Grain Veggie Burgers on Homemade Buns, Braised Meat and Veggies with Homemade Biscuits, Empanadas, Sushi and more.
Plan on harvesting most of your veggies and herbs from the kitchen garden. Make friends with beneficial insects, construct houses for garden friendly birds and bats.

Instructor: Gilly Gifford
Gilly Gifford is a North West born and bred farmer and culinarian. She is a graduate of Seattle Culinary Academy and has worked with some outstanding chefs in both Seattle and Portland. While working at Lark in Seattle she had the opportunity to explore her interests in cheese making and curing meats at Kurtwood Farm, famous for it’s farmstead cheese among other things. The farm frequently hosts dinners in the kitchen for 20 serving only foods from the property. Her time on the Farm led her away from the kitchen and off to the Iberian Peninsula in search of traditional cheese making and charcuterie. She settled in a small town in central Portugal with a hardworking family on a self-sustaining off the grid homestead. For two years she lived on the farm milking goats, raising pigs, harvesting olives, grinding corn and making wine, cheese and charcuterie. To complete her cheese making internship she worked at River’s Edge Chevre in Logsden, Oregon. Following that she ran the Herdshare milk program for Willow Witt. Now she is ready to teach all that she has learned about artisan cheese making, and she has some great stories to tell!

Henry and Sharon Herting are a husband and wife duo that will be sharing their love for gardening during our Kid’s Camp program this June. Henry has had vegetable gardens all of his life. When he was a boy his great grandfather would come by to help prepare his families garden beds. Henry has enjoyed teaching his own child to garden and the neighborhood children as well. He believes that gardening can be fun and bountiful in so many ways, and a tranquil retreat in anyone’s life. Sharon’s first garden was at the age of 23 growing mostly zucchini and tomatoes. Since that time she and Henry have had vegetable and flower gardens at each home they’ve lived in. Her current garden is in a raised bed where she is learning the French Intensive method of gardening which incorporates herbs, flowers and vegetables planted together. Sharon also has an interest in seed saving and beneficial insects both important aspects of gardening.
