Cara Cara and Blood Orange Salad

Ingredients:

Dressing:
¼-½ teaspoon chili chipotle powder
2 tablespoons orange juice
1 tablespoon honey
½ of a cara cara orange, peeled and chopped
1 tablespoon lime juice
2 tablespoons extra virgin olive oil
1 shallot, coarsely chopped
1 teaspoon sea salt

Salad:
2 cara cara oranges, each peeled and cut into 5 slices
2 blood oranges, each peeled and cut into 5 slices
1 avocado, pitted and cut into about 12 slices
1 bunch spinach, washed and torn into bite-sized pieces

Preparation:

  • Combine all the dressing ingredients and blend until smooth.
  • Place the salad ingredients in a large bowl. Pour the dressing over the top, and gently toss until the greens are nicely coated.
