Orange Braised Chicken
Ingredients:
4 skinless, boneless chicken breast halves
½ cup unbleached white or spelt flour
3 cloves garlic minced
2 tablespoons safflower oil
Zest of two oranges like navels
1 cup orange juice
¼ cup dry white wine
2 oranges peeled and sliced
2 tablespoons balsamic vinegar
2 tablespoons fresh parsley minced
Preparation:
- Pound the chicken to about a ¼ inch thick.
- Combine the flour and garlic. Dredge the chicken in the flour to coat on both sides.
- Heat the oil in a large skillet. Sauté the chicken, turning when the bottom side is browned. When it is browned on both sides and tender, add the zest, orange juice and white wine. Bring all to a simmer.
- Remove chicken to a platter and garnish with the orange slices. Meanwhile add the vinegar to the skillet and reduce the sauce to slightly thicken it. Pour the sauce over the chicken. Garnish with the parsley.
- You may want to serve the chicken on a bed of basmati rice or fresh spinach leaves.
