Quinoa Spelt Pancakes
Ingredients:
1 ½ cups whole grain spelt
1 teaspoon sea salt
1 teaspoon baking powder
2 eggs
3 tablespoons butter melted
1 ½ cups buttermilk
1-2 tablespoons honey
1 teaspoon vanilla
1-2 cups cooked quinoa
More butter for cooking
Preparation:
- Mix all the dry ingredients in one bowl.
- In another bowl, beat the eggs and add the butter, buttermilk, honey and vanilla.
- Pour the wet ingredients into the dry and stir just to combine. Gently fold the quinoa into the batter.
- Heat a cast iron skillet over medium heat. Put 1-3 teaspoons melted butter into the skillet to coat the bottom. Pour the batter into the pan for the desired size of pan cake. Cook on one side until bubbles appear. Flip to the other side and cook until browned.
- Serve with yogurt and apple sauce for breakfast or use as an appetizer with lox and cream cheese.
