[Artichokes]
1- 2 lemons {make sure they are juicy}
4 small artichokes, trimmed and halved
4 tablespoons olive oil, plus more for brushing
4 garlic cloves
3 sprigs fresh thyme
Fresh pepper to taste
Salt to taste

[Aioli]
½ lemon (the other half from your artichoke)
½ cup mayonnaise
2 garlic cloves (minced)
Salt and fresh pepper to taste
1

(Artichoke):
Preheat the grill to high heat

Cut the lemon in half and squeeze out the juice in a bowl. If the lemon is not juicy use another. Set aside for sauce later. Cut remaining lemon into wedges.

Boil artichokes in water for about 50 min, with 2 tablespoons olive oil, garlic cloves, lemon quarters and thyme. Boil until artichokes are tender.

Remove artichokes from water, and allow them to cool for about  5 minutes. Blot with a paper towel to remove any excess moisture. You can also give them a little shake to remove water in the leaves.

Brush generously with olive oil and sprinkle with salt and pepper. Set on the grill flat side down for about 4 min.
Serve with garlic Aoili.

(Aoili):
Blend all the ingredients in a small bowl and serve alongside your artichokes. Garnish with extra fresh ground pepper
